Under the direction of Chef Alexandre Baule, Estelo showcases local produce and terroir cuisine, with freshly grilled fish from the fish market and Mediterranean dishes that sublimate the rich flavors of the South. Eggplant confit à la sarriette and aïoli with early vegetables perfectly embody this simple yet refined cuisine, ideal for sharing moments by the water.
